Happy St. Pat's Day!

I picked up a small corned beef and the sides to make us a little St. Patty's Day Feast and I have to say it turned out quite well. I just purchased one of those packaged corned beefs (that comes with the little flavor/spice packet) that you see in the grocery. Simple as could be:  put the roast on a rack, spread the spice on top and then cracked pepper, cover with foil and bake at 350 for about 50 minutes per pound. Let it rest 20 minutes and slice across the grain. Easy Peasy

In a large cast iron skillet I browned some cabbage wedges, threw in some sliced carrots and then baked all that for about 45 minutes.

I also made plain boiled red skins to sort off set all the other flavors--corned beef is pretty salty (even though I did buy a lower sodium version!)

Lake District Eats

If you ever find yourself in central Florida I can recommend a few spots to try. Don't miss the Yalaha German Bakery or the Copacabana Cuban place in Mt. Dora. Also, breakfast at Sara's Lake House isn't bad either :-)
