1/2 package of feta, in large crumbles
1 cup cut up seedless watermelon
1/2 cup of fresh mint, chopped
Combine all ingredients and toss with dressing.

Watermelon and Feta
Here is a lovely summer salad with some unexpected flavors. I happen to really like Trader Joe's Champagne Vinaigrette so I used that to dress this dish, but any light dressing (bottled or homemade would work).
1 package of baby arugula
1/2 package of feta, in large crumbles
1 cup cut up seedless watermelon
1/2 cup of fresh mint, chopped
